How is Christmas celebrated in Puglia? What do people eat for the occasion? Sweets are a must. Ancient contact with other cultures has certainly influenced Puglia's confectionery production, but the ingredients used to make them always come from our countryside. Almonds, honey, wheat, figs, quinces, olive oil, flour, and white wine are the basic ingredients for the creation of traditional Christmas sweets, including the delicious, crunchy "carteddate" and the "purcidd," small sweet dumplings that are a must-have on any table, some of the quintessential symbols of Christmas in Puglia. Their preparation is a timeless tradition. During the Christmas season, everyone gathers in their homes to prepare these little rosettes, thus passing down the ancient secrets of a recipe under the Christmas tree.
